Oak ageing for Mead – why not? This Oak & Shield example has seen a minimum of 90 days ageing in oak barrels which smooths out the honey and floral tones while allowing the citrusy lemon, lemon pith and orange zest aromas and flavours to all intermingle and balance. A bit more swagger than the “Wild & Naked” example and would stand up nicely against afternoon charcuterie.
